We are two sisters, Annika and Karoline, starting a new chapter at our family estate, Finca La Maye, located in Alicante, Spain. This land has provided sustenance for our family for over 100 years and now we, the fifth generation, stand as its custodians.
Our agricultural practices are in harmony with the fundamental cycles of nature, ensuring sustainable production without the use of synthetic chemicals. We infuse our oil with our love for nature and enthusiasm for life.
Generations past planted this grove creating a diverse plantation, from the oldest trees beeing over 100 years old to the youngest that are just a few decades old including numerous native varieties.
These olive trees, with a past and a history, transmit to the fruit the flavor of the sun, the nutrients of the earth and the care of friendly hands.
At Finca La Maye we produce two types of olive oil, Green Extra Virgin Olive Oil and Mature Extra Virgin Olive Oil.
In mid-October we started the campaign carefully selecting the best trees that have the fruit at the optimum point of maturity to obtain our PREMIUM Green EVOO of the best possible quality. This is why every year we obtain a blend of different varieties. This young, intense and aromatic oil is ideal for raw consumption.
In mid-November we harvested another batch of olives to produce por Green EVOO. This oil is still quite aromatic but not as much as the previous one.
The rest of the olives are harvested in December to obtain our Mature EVOO, an oil with a milder flavor ideal for cooking.
