All our olive oil is homegrown. Made from olives from our land, from our century-old olive grove located in the interior of the province of Alicante, Spain.
"Green" or "early harvest" olive oil is obtained from olives harvested "green", when they have not yet finished maturing, when they begin to change color from green to purplish. From these olives, a more intense and aromatic oil is obtained, ideal for raw consumption.
Our olive grove is made up of several native varieties resulting in different coupages every year.
Our PREMIUM EVOO is harvested mid october, resulting in a superior quality, very aromatic and intense olive oil. Our Green EVOO is harvested mid november resulting in a less intense oil.
Our agricultural practices are organic despite not being certified since we believe that the transparency of the producer is more valuable than a lable.
